banoffee ice cream
As the banana saga continues I decided to make ice cream - turning to the internet I found a really simple recipe, but decided to jazz it up a bit by adding choc chips, toffee chunks and bits of digestive biscuit! My eldest daughter set to by breaking up biscuits whilst I blitzed the rest in my mixer (or the man-mixer as it is called in our family due to weight and size!) the result, tried by my parents and some friends following a spontaneous Thai take-away on Friday was pretty good... it is quite rich so goes quite a long way!
Chop 3 bananas (fairly ripe) into your mixer, add 400ml of double cream, then add a handful of both dark chock chips and toffee chunks to the cream and bananas, finally add 3 digestives, broken up into quite small pieces and blitz on a low to medium speed until you are content that everything is well mixed. Note you are NOT whipping the cream.
Pour the mixture into a freezer tub and stir every hour or so until it is freezing hard.
We found it quite tough to get out of the tub once frozen so you might want to remove it from the freezer a little while before serving.
