austerity fritters!
I love what we call 'free meals' - you know the ones; when you open the fridge and create something seemingly out of...nothing!
One of the most basic ones that I do frequently for my daughters is a sort of fridge-fritter.
I usually use left over veg and potato from a Sunday lunch, mixed with one egg, some grated cheese and anything else you fancy. If you find the mixture a bit gloopy then just add a little bit of flour to stiffen it up.
Once you are happy with your mixture you can fry it in little 'patties' or as I have done - spoon it into a biscuit cutter to get a desired shape...
Yummy served with ketchup or mayo!
