Mini Simnel Cakes for Mothering Sunday.

Last year, for the first time we ran a small Mothering Sunday craft workshop. Bleary-eyed and sheepish men in their late 30's tip-toed into church and found themselves getting stuck into making necklaces, cards and decorating cakes. To ease their pain we made sure that real coffee was offered as soon as they set foot in the door. One of the more successful activities was for the children to finish off making individual simnel cakes. I simply made my easiest fruit cake/medeara cake and spooned the mixture into cupcake cases. The children were able to simply roll out some golden marzipan, cut with a biscuit cutter to fit on top and then decorate with small balls of marzipan, or if you are terribly exotic; chocolate eggs. Bingo.
