On our way to Easter!

We're rocketing through Lent at quite a speed (thank goodness!); one minute I am cooking mini simnel cakes for our Mothering Sunday workshop and the next, I am having to knock something out for the school bake sale. Plenty of exotic cup cakes are delivered to the sale, including some that I am sure are shop bought (miaow!). In a bid to do something slightly different I decided to make mini-cupcakes and present them in egg boxes, topped off with little Easter eggs. I was really please with the result, even if the mother running the stall looked slightly puzzled as I handed over two boxes... Imagine my delight and surprise when I open a new (birthday pressie) cook book to see exactly what I had done on the centre page!
