Baking out of a rut...


Trying to sort a number of issues at the moment: Depressed about Brexit, but must not drink more alcohol to numb the pain. Hated January - officially the worst month of the year - at least February is short and has a slight chance of snow down here. Frustrated by boring midweek meals, and weekend ones for that matter. My New Year’s resolution this year was to get some new recipes into the cookery-canon and for at least a few of them to be veggie. Lots of reasons for a bit of vegetarianism: cheaper, better for the guts, fear about rising price of food and I would rather support British meat farmers and now will be avoiding the food miles of foreign imports - taking back control of my shopping if you like *rolls eyes*. 

With the help of Jamies Veg book (excellent Christmas pressie from the Canon, but don’t tell him I NEVER stick to a recipe exactly, I see them more as inspiration) the family has sampled a number of new creations. Tonights meal is actually a homage to something my mother makes which has no name. The girls call it Puff Pastry Pizza! 

Here goes:1 Sheet of ready rolled Puff pastry, 1 packet of goats cheese, 1 pepper, 1 onion, a bit of garlic, some tomatoes that looked like they might go off soon, about 100g of cheddar, 2 eggs and a splash of milk. To avoid uncooked veg, i roasted it all in a little olive oil in a flat baking tin which after removing them from it, I used as the tin for baking the final creation. There’s no need to patronise you with the method - basically chuck it all in and bake!
